Sisig is very popular in the Philippines. Most Filipino restaurants have this in their menu. It is commonly made of pig's ear, pig's face and pork liver. In this particular recipe I used loin steak (pork chops) and pork liver. It was my first time to cook this dish, but I'm so glad that it turned out well. Hubby enjoyed it a lot and so did I.
4 pieces loin steak (or pork chops or pork belly)
200 grams pork liver
1 1/2 cups water
3 tablespoons soy sauce
1/2 teaspoon ground pepper (black)
3 cloves garlic
2 bay leaves
1/2 teaspoon salt
4 tablespoons butter
1 big onion (preferably white)
2 tablespoons calamansi juice (pure calamansi extract)
2 pieces of chili pepper (green or red / you made more if you wish)
- Boil the loin steak and pork liver in a pot with mixture water, soy sauce, garlic, ground pepper, salt and bay leaves. Let it simmer for about 35- 45 minutes or until most liquid evaporates. Make sure to set your stove in medium heat.
- Set aside the meat to col down. Then when it's cool enough, chop the loin steak and pork liver into small pieces.
- In a clean pan, melt the butter and stir-fry the garlic for 1 minute. Then add the meat, calamansi, and green chili. Cook it for another 5 minutes.
- Finally, add a piece of egg and mix thoroughly.
- Serve hot. Add Knorr seasoning depending on your taste.
